Courgette Risotto

This is a sumptuously smooth, peas and lemon courgette risotto. This is a fun and delicious vegetarian risotto. Great for dinner and lunch.

Servings: 8

Cook time: 18 minutes

Ingredients:

2 tbsps. olive oil

4 cloves garlic, finely chopped

1.5 lb. Rice (Arborio)

6 tomatoes, chopped

2 tsps. chop rosemary

6 courgettes, finely diced

1 ¼ c. peas, fresh or frozen

12 c. hot vegetable stock

1 c. chopped

Salt and ground black pepper to taste

Directions:

1. Place a large, heavy-bottomed pan over medium heat. Add oil.

2. When the oil is heated, add onion and sauté until translucent.

3. Cook the tomatoes until soft. Next, stir in the rice and rosemary. Mix well. Add half the stock and cook until dry. Stir frequently.

4. Add remaining stock and cook for 3-4 minutes.

5. Add courgette and peas and cook until rice is tender.

6. Add salt and pepper to taste.

7. Stir in the basil and let it sit for 5 minutes.

8. Serve warm and enjoy
